How to make Rice and beans

A plate of plain or coconut rice topped with a stew of red kidney beans, one of the most common everyday meals in homes and small restaurants across the country.

Serves 4 35 min

Ingredients

  • 2 x 400 g tins red kidney beans, drained
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 clove garlic, crushed, and 1 teaspoon curry powder (optional)
  • 200 ml coconut milk
  • Salt, and cooked rice to serve

Method

  1. Heat the oil in a pan and fry the onion for 5 minutes until soft.
  2. Add the garlic, curry powder and tomatoes and cook for 5 minutes until the tomatoes break down.
  3. Add the beans and 100 ml water, stir and simmer for 5 minutes.
  4. Pour in the coconut milk, add salt and simmer gently for 10 minutes until creamy, stirring now and then.
  5. Serve spooned over hot rice.
