How to make Kachumbari

A fresh, uncooked salad of finely chopped tomatoes, red onion and chilli with lime or lemon juice and salt. It is served with pilau, nyama choma and chipsi mayai to add freshness.

Serves 4 15 min

Ingredients

  • 4 ripe tomatoes, finely chopped
  • 1 red onion, very thinly sliced
  • 1 small green chilli, finely chopped (optional)
  • A handful of fresh coriander, chopped
  • Juice of 1 lime or lemon
  • Salt

Method

  1. Soak the sliced onion in cold salted water for 5 minutes to soften its taste, then drain.
  2. Mix the tomatoes, onion, chilli and coriander in a bowl.
  3. Add the lime juice and salt just before serving and toss gently.
