How to make Tarator
tarator (таратор)

A cold summer soup of yogurt thinned with water, with chopped cucumber, garlic, dill and a little sunflower or olive oil. It is served chilled on hot days.
Ingredients
- 500 g plain yogurt
- About 300 ml cold water
- 1 large cucumber, finely diced or grated
- 2 garlic cloves, crushed
- A small bunch of dill, chopped
- 2 tablespoons sunflower or olive oil and salt
Method
- Whisk the yogurt until smooth, then stir in the cold water until it is as thin as you like.
- Add the cucumber, garlic, dill and oil and season with salt.
- Chill for at least 30 minutes and serve very cold, with a few ice cubes on hot days.

Similar yogurt and cucumber dishes are eaten from Greece to Turkey and the Middle East, but in Bulgaria tarator is eaten as a soup.
