How to make Shopska salad
shopska salata (шопска салата)
All of Bulgaria, named after the Shopi people around Sofia

Bulgaria's best-known salad: chopped tomatoes, cucumbers, onion and peppers under a thick snowy layer of grated sirene, a white brined cheese. It is often eaten as a starter with a glass of rakia.
Ingredients
- 4 ripe tomatoes
- 1 large cucumber
- 2 green or red peppers, raw or roasted and peeled
- 1 small onion or 3 spring onions
- 200 g sirene or feta cheese
- 3 tablespoons sunflower oil, a little red wine vinegar, salt and chopped parsley
Method
- Dice the tomatoes, cucumber and peppers and slice the onion finely.
- Put the vegetables in a bowl, season with salt and dress with the oil and a few drops of vinegar.
- Grate or finely crumble the cheese over the top so that it covers the salad completely.
- Scatter with parsley and serve at once, cold.

Although it tastes of the village, the salad is fairly young: it is thought to have been created in the mid-1950s for the state tourism company Balkantourist.
