How to make Nhopi (pumpkin mash)

Pumpkin or butternut boiled until soft and mashed, sometimes with a little maize meal, and usually with a spoonful of peanut butter. It is naturally sweet and filling.

Serves 4 30 min

Ingredients

  • 2 medium butternuts or about 1 kg pumpkin
  • 2 tablespoons brown sugar
  • A pinch of salt
  • 1 tablespoon butter or margarine
  • 60 ml milk
  • 2 tablespoons peanut butter

Method

  1. Peel the butternuts, remove the seeds and cut the flesh into rough chunks.
  2. Put them in a pot with a little water, the sugar and the salt. Cover and cook for about 20 minutes, until soft.
  3. Drain off any extra water and mash with the butter.
  4. Mash in the milk and then the peanut butter until smooth. Serve warm.
