How to make Bobotie
Cape Town and the Western Cape, from Cape Malay cooking

Gently curried minced beef or lamb with onions and dried fruit, baked under a golden layer of egg and milk. It is served with yellow rice and fruit chutney.
Ingredients
- 1 thick slice of white bread, crusts removed
- 375 ml milk
- 2 tablespoons oil and 1 tablespoon butter
- 2 onions, finely chopped
- 2 cloves garlic, crushed
- 1 tablespoon mild curry powder and 1 teaspoon turmeric
- 1 kg minced beef or lamb
- 2 tablespoons fruit chutney and 1 tablespoon apricot jam
- 1 tablespoon lemon juice or vinegar
- 50 g raisins or sultanas
- 3 eggs
- 4 bay leaves, and salt and pepper
Method
- Heat the oven to 180 °C. Soak the bread in the milk for a few minutes, then squeeze it out and keep the milk.
- Fry the onions in the oil and butter until soft, add the garlic, curry powder and turmeric and cook for 1 minute.
- Add the mince and fry until it is no longer pink, breaking it up. Stir in the chutney, jam, lemon juice, raisins, the squeezed bread, 1 teaspoon of salt and some pepper, and cook for 5 minutes.
- Spread the mixture in an ovenproof dish and press it down lightly.
- Beat the eggs with the saved milk (add more milk to make about 375 ml) and pour it over the meat. Push the bay leaves into the top.
- Bake for 35 to 40 minutes, until the topping is set and golden. Serve with yellow rice and chutney.
