How to make Dakkous

A simple spicy tomato sauce with garlic, chilli and cumin, spooned over kabsa, saleeg and other rice dishes.
Ingredients
- 4 ripe tomatoes, or 1 x 400 g tin chopped tomatoes
- 2 cloves garlic
- 1 or 2 small green chillies (use less for a milder sauce)
- 1/2 teaspoon ground cumin
- 1 tablespoon lemon juice
- A small handful of fresh coriander
- Salt
Method
- Put the tomatoes, garlic, chillies and coriander in a blender and blend until fairly smooth.
- Pour into a small pan with the cumin and a pinch of salt and simmer for 5 to 8 minutes, until slightly thickened.
- Stir in the lemon juice and taste for salt. Serve warm or cold with rice dishes.
