How to make Chai

Chai ya maziwa (milk tea)

Kenyan black tea boiled together with milk and sugar, sometimes with ginger or cardamom. It is drunk at breakfast and again during the day, and is offered to every guest.

Serves 4 10 min

Ingredients

  • 500 ml water
  • 500 ml milk
  • 3 teaspoons loose black tea (Kenyan if you can find it), or 3 tea bags
  • 2 to 4 teaspoons sugar, to taste
  • A small piece of fresh ginger, sliced, or 2 crushed cardamom pods (optional)

Method

  1. Bring the water to the boil in a pan with the ginger or cardamom.
  2. Add the milk and bring back to the boil, watching that it does not boil over.
  3. Add the tea and sugar, lower the heat and simmer for 2 to 3 minutes until it is a rich brown colour.
  4. Pour through a strainer into cups. Take care: it is very hot.
