How to make Malabi

Eaten across the Middle East and Turkey

A cool, silky milk pudding set with cornflour, topped with rose water syrup, chopped pistachios and coconut. It is sold from street carts on hot days.
Ingredients
- 1 litre milk
- 80 g cornflour (cornstarch)
- 80 g sugar
- 1 tablespoon rose water
- For the syrup: 100 ml water, 3 tablespoons sugar, 1 teaspoon rose water and a few drops of red food colouring or raspberry syrup
- Chopped pistachios and desiccated coconut to serve
Method
- Mix the cornflour with 250 ml of the cold milk until smooth.
- Heat the rest of the milk with the sugar until it steams.
- Pour in the cornflour mixture and stir all the time over medium heat until the pudding thickens and bubbles, about 5 minutes.
- Take off the heat, stir in the rose water and pour into six glasses or bowls. Chill for at least 3 hours.
- For the syrup, boil the water and sugar for 3 minutes, then add the rose water and colouring and let it cool.
- Before serving, pour a little syrup on each pudding and sprinkle with pistachios and coconut.
