How to make Salad Shirazi

سالاد شیرازی (sâlâd shirâzi)

A fresh chopped salad of cucumber, tomato and onion with dried mint, dressed with lime juice or verjuice (sour grape juice) and a little oil. It is served with rice and kebabs, and some people spoon it over their rice.

Serves 4 15 min

Ingredients

  • 2 cucumbers
  • 3 firm tomatoes
  • 1 small red onion
  • 1 tbsp dried mint
  • Juice of 2 limes, or 4 tbsp verjuice
  • 2 tbsp olive oil
  • Salt and black pepper

Method

  1. Cut the cucumbers, tomatoes and onion into very small, even cubes, about 5 mm.
  2. Put them in a bowl and sprinkle over the dried mint, rubbing it between your fingers.
  3. Whisk the lime juice or verjuice with the oil, 1/2 tsp salt and some pepper.
  4. Pour the dressing over the salad and mix gently.
  5. Leave for 10 minutes so the flavours come together, then serve cold with rice, kebabs or bread.
