How to make Tzatziki
Tzatzíki (τζατζίκι)

A cool dip of strained yogurt, grated cucumber, garlic, olive oil and a little vinegar or lemon, often with dill or mint. It is served as a meze and as a sauce for souvlaki and gyros.
Ingredients
- 500 g thick strained Greek yogurt
- 1 cucumber
- 2 garlic cloves, crushed
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon chopped dill or mint
- Salt
Method
- Grate the cucumber, sprinkle it with a pinch of salt and leave it for 10 minutes.
- Squeeze the cucumber hard in your hands or in a clean cloth to remove as much water as possible.
- Mix the yogurt with the cucumber, garlic, olive oil, vinegar and herbs. Season with salt.
- Chill for at least an hour so the garlic flavour spreads, then drizzle with a little more olive oil to serve.
