How to make Fasolada
Fasoláda (φασολάδα)

A thick soup of dried white beans simmered with tomato, carrot, celery, onion and plenty of olive oil. It is sometimes called the national food of the Greeks.
Ingredients
- 500 g dried white beans, soaked in cold water overnight
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery sticks, sliced
- 400 g chopped tomatoes
- 1 tablespoon tomato paste
- 120 ml olive oil
- 1 bay leaf
- Salt and black pepper
Method
- Drain the soaked beans, cover them with fresh water and boil hard for 10 minutes. Drain again.
- Put the beans back in the pot with about 2 litres of fresh water and the bay leaf. Simmer for about an hour until almost tender.
- Add the onion, carrots, celery, tomatoes, tomato paste and olive oil.
- Simmer for another 45 to 60 minutes until the beans are soft and the soup is thick. Season with salt and pepper only at the end.
- Serve with bread, olives and a little feta.
