How to make Pebre
Central Chile

A fresh sauce of chopped tomato, onion, coriander, chilli, oil and vinegar. It is served with bread at the start of a meal and with grilled meat.
Ingredients
- 3 ripe tomatoes, finely diced
- 1 small onion, very finely chopped
- A large bunch of fresh coriander, finely chopped
- 1 or 2 fresh green or red chillies, seeds removed, finely chopped
- 1 garlic clove, crushed
- 2 tablespoons red wine vinegar
- 3 tablespoons sunflower or olive oil
- Salt
Method
- Rinse the chopped onion in cold water and drain it well. This makes it milder.
- Mix the tomato, onion, coriander, chilli and garlic in a bowl.
- Add the vinegar, oil and a good pinch of salt and stir.
- Leave for 20 minutes so the flavours blend. Serve with fresh bread or grilled meat. Eat it the same day.
