How to make Deruny (potato pancakes)

Crisp pancakes of grated raw potato and onion, fried in oil and served hot with sour cream.

Serves 4 40 min

Ingredients

  • 1 kg floury potatoes, peeled
  • 1 onion
  • 1 egg
  • 2 tablespoons plain flour
  • Salt and pepper
  • Sunflower oil for frying
  • Sour cream to serve

Method

  1. Grate the potatoes and the onion finely into a bowl. Tip into a sieve and press out as much liquid as you can.
  2. Mix in the egg, flour, salt and pepper.
  3. Heat a thin layer of oil in a wide frying pan over a medium heat.
  4. Put spoonfuls of the mixture in the pan and flatten them a little. Fry for 3 to 4 minutes on each side until deep golden and cooked through.
  5. Drain on kitchen paper and serve hot with sour cream.

The name comes from the verb 'derty', to grate. Similar potato pancakes are made from Ireland to Belarus.
