How to make Zemiakové placky (potato pancakes)

Pancakes of grated potato fried in oil until crisp and golden, eaten hot on their own or as a side dish.
Ingredients
- 1 kg floury potatoes, peeled
- 2 eggs
- 3 tablespoons plain flour
- 3 cloves garlic, crushed
- 1 teaspoon dried marjoram, salt and black pepper
- Oil or lard for frying
Method
- Finely grate the potatoes, put them in a sieve or clean cloth and squeeze out as much liquid as you can.
- Mix in the eggs, flour, garlic, marjoram, salt and pepper.
- Heat a thin layer of oil in a large frying pan. Spread spoonfuls of the mixture into thin rounds.
- Fry over medium heat for 3 to 4 minutes on each side, until golden and crisp and cooked through. Drain on kitchen paper.
- Serve hot, on their own or with sour cream.
