How to make Cheese rolls
Southland and Otago

Slices of white bread spread with a cheesy, oniony filling, rolled up into tubes and toasted with butter until golden and crisp. They are a favourite at cafés in the south of the South Island.
Ingredients
- 1 can (375 ml) evaporated milk
- 1 packet (about 30 g) onion soup mix
- 250 g grated tasty (mature cheddar) cheese
- 1 teaspoon mustard powder (optional)
- 12 slices white sandwich bread
- Soft butter, for the outside
Method
- Heat the evaporated milk in a pan over low heat. Stir in the onion soup mix, cheese and mustard powder and keep stirring until the cheese melts and the mixture thickens. Let it cool until spreadable.
- Heat the oven to 200 °C, or heat the grill.
- Spread a thin layer of filling on each slice of bread, right to the edges, then roll it up tightly like a tube.
- Put the rolls on a tray with the join underneath and brush the tops with a little butter.
- Bake or grill for 10 to 15 minutes, turning once, until golden and crisp. Serve hot.
