How to make Banana fritters

Slices of ripe banana dipped in a light batter and deep-fried until golden. They are sold hot from street stalls and eaten as a snack or dessert.

Serves 4 25 min

Ingredients

  • 4 ripe bananas
  • 120 g plain flour
  • 2 tablespoons sugar
  • 1 egg
  • About 150 ml milk or water
  • A pinch of salt
  • Oil for frying

Method

  1. Whisk the flour, sugar, salt, egg and milk into a smooth, thick batter.
  2. Peel the bananas and cut them in half lengthwise, then into pieces.
  3. Heat about 2 cm of oil in a deep pan until a drop of batter sizzles at once.
  4. Dip the banana pieces in the batter and fry a few at a time for 2 to 3 minutes, turning once, until golden. Take care with the hot oil.
  5. Drain on paper and serve warm, sprinkled with a little sugar.

Mofo means bread or cake and akondro means banana. Madagascar grows many kinds of banana, and fried banana snacks are sold almost everywhere.
