How to make Sprat sandwich

An open sandwich of dark rye bread with butter, spiced salted sprats and a slice of boiled egg.

Serves 4 20 min

Ingredients

  • 8 slices of dark rye bread
  • Soft butter
  • 16 to 24 spiced salted sprat fillets (or canned smoked sprats, see the last step)
  • 3 hard-boiled eggs, sliced
  • A small red onion, finely chopped, and some fresh dill or chives

Method

  1. Butter the slices of rye bread.
  2. Lay two or three sprat fillets on each slice.
  3. Put a slice of hard-boiled egg on top of the fish.
  4. Finish with a little red onion and chopped dill or chives, and serve at once.
  5. Spiced sprats are cured in salt and spices, not cooked. Pregnant women, young children, older people and anyone with a weak immune system should use canned smoked sprats instead, which are cooked.
