How to make Zagorje štrukli

Very thin pastry rolled around a filling of fresh cottage cheese, eggs and sour cream, cut into pieces and either boiled or baked with cream until golden.

Serves 4 1 h 30 min

Ingredients

  • For the dough: 300 g plain flour, 1 egg, 1 tablespoon oil, a pinch of salt and about 150 ml lukewarm water
  • For the filling: 500 g fresh cottage cheese (well drained), 2 eggs, 150 ml sour cream and a pinch of salt
  • For baking: 200 ml single cream and 30 g butter

Method

  1. Mix the flour, egg, oil, salt and water into a soft, smooth dough. Knead for 5 minutes, brush with oil, cover and rest for 30 minutes.
  2. Mix the cottage cheese, eggs, sour cream and salt into a thick filling.
  3. On a floured cloth, roll and then gently stretch the dough with your hands until it is very thin and almost see-through.
  4. Spread the filling along one long edge, then roll up the dough using the cloth. Cut into pieces about 10 cm long, pressing the ends closed with the edge of a plate.
  5. Put the pieces in a buttered baking dish, pour over the cream, dot with butter and bake at 200°C for about 35 to 40 minutes, until golden. Serve hot.
