How to make Frittatensuppe

Clear beef broth with thin strips of pancake, sprinkled with chives. It is one of the most common soups to start a traditional Austrian meal.
Ingredients
- 100 g plain flour
- 200 ml milk
- 1 egg
- A pinch of salt
- A little butter, for frying
- 1 litre good beef broth
- Chopped chives
Method
- Whisk the flour, milk, egg and salt into a smooth, thin batter and leave it to rest for 10 minutes.
- Heat a little butter in a frying pan and pour in just enough batter to cover the base thinly.
- Cook for about 1 minute on each side, until lightly golden and set. Repeat with the rest of the batter.
- Let the pancakes cool a little, roll them up and slice them into thin strips.
- Bring the broth to the boil. Put the pancake strips into soup bowls, pour the hot broth over them and sprinkle with chives.
